Seed Rooftop, a rooftop restaurant and cocktail bar, has opened up at Hyatt Regency Malta.

It is the third Seed concept to open up at the St Julian’s hotel, following Seed Brasserie and Seed Café.

The new rooftop concept is designed to attract guests in the daytime and keep them there through the evening.

“Seed Rooftop is the moment the day becomes the evening,” said Hyatt Regency Malta General Manager Adrian Attard.

“We wanted to create a space where guests don’t feel the need to be anywhere else – where the view, the food and the atmosphere all tell the same story.”

Hyatt Regency Executive Head Chef Gianni Zammit said the rooftop menu has been designed for sharing and staying, complete with bold flavours, honest ingredients, and drinks worth lingering over.
