ION Harbour, the restaurant situated on the rooftop of Valletta’s Iniala Harbour House, a luxury hotel, has welcomed the British Chef Simon Rogan as its Chef Patron, saying it is “extremely proud to announce the new chapter”.

The restaurant has now been renamed ION Harbour by Simon Rogan.

ION Harbour described Mr Rogan as one of the pioneers of the farm-to-table movement in the UK”, and said that his menus “are strongly guided by hyperlocal ingredients that are harvested, fished and foraged by the best and most sustainable local producers.”

He has eight other restaurants across the UK and Hong Kong, with L’Enclume, in the Lake District, currently holding three Michelin Stars.

ION Harbour, which is one of six restaurants in Malta holding a coveted Michelin Star, said that the team has “worked hard to create a seasonal menu that champions the abundant produce found in the Maltese countryside and its Mediterranean waters.”

“Our menus are strongly guided by hyperlocal ingredients that are found, foraged, fished or farmed by the best, sustainable and ethical local producers.”

The new menu will officially open for dinner on 16th March (today) and for lunch and dinner from 17th March.
