Fernandõ Gastrotheque, one of Malta’s most prestigious fine dining establishments, has announced the appointment of its new Head Chef, Hiram Cassar. Known for his exceptional culinary expertise and innovative approach to gastronomy, Mr Cassar brings a wealth of experience from some of Europe’s most renowned Michelin-starred kitchens.

Mr Cassar’s career began in Paris, where he trained in one of the city’s busiest Michelin-starred restaurants under the esteemed Christian Constant, former chef de cuisine at the two-star Le Crillon at the Ritz. His early years in high-pressure, high-calibre kitchens laid the foundation for his meticulous technique and passion for refined flavours.

At just 24, Mr Cassar showcased his entrepreneurial spirit by opening and running his own restaurant, Chapter One, for six years. During this time, he continued refining his craft in several Michelin-starred establishments across Europe. His culinary journey then led him to Switzerland, where he collaborated with Michelin-starred chef Robert Speth at Restaurant Chesery in Gstaad, further honing his ability to balance tradition with innovation.

With a background that merges Maltese and Japanese heritage, Mr Cassar’s cuisine is a sophisticated blend of French, Japanese, and Mediterranean influences. His approach seamlessly integrates classical techniques with contemporary flavours, promising an exciting new chapter for Fernandõ Gastrotheque’s ever-evolving menu.

Since its opening in June 2018, Fernandõ Gastrotheque has established itself as a destination for exceptional food and superior wines. Its dedication to high standards quickly earned industry recognition, securing a coveted place in the Michelin Guide in 2021. In March 2023, it made history by being awarded Malta’s first-ever Michelin star for restaurants.
