Celebrated London chef Alex Dilling, who is “widely seen as the UK’s next top chef”, will begin a 100-day residency at ION – The Harbour, from 18th June, the restaurant has announced.

Gaining especial reverence in his capacity as Executive Chef at the two-Michelin Starred London restaurant, The Greenhouse, Mayfair, Mr Dilling is expected to bring “a new level of culinary skills to both Malta and ION – The Harbour”.

ION – The Harbour, despite being one of Malta’s younger restaurants has not been short of acclaim. After barely half a year open, it was one of two restaurants in Malta to be granted its first Michelin Star when the awards were announced in April.

In the words of Michelin at the time, the fourth-floor restaurant, sitting atop a stylish hotel, offers “skillfully prepared dishes from chef Andrew Borg”.

“The daily menus are dictated by the best produce available from local farmers and fishermen and the cooking is classically based, with Mediterranean influences and a modern edge,” the guide said.

Mr Dilling announced in June that The Greenhouse would not be reopening. Since then, he has cooked as a guest chef at several locations, including Atlas Restaurant in Atlanta, Georgia.

ION – The Harbour will accept bookings from 4th June but till then, foodies can visit Mr Dilling’s Instagram for an idea of what they have to look forward to.
