The culinary team behind Maltese Michelin Starred restaurant Under Grain has arrived in London ahead of a Michelin Four Hands event hosted at Sola Restaurant, it announced on Tuesday.

The event, which will take place on Tuesday (today), involves regular collaborative dinners that see a number of top-rated international chefs from different restaurants team up to curate a tasting menu specifically for one night of service.

This edition will see Under Grain Executive Chef Victor Borg and other members of the culinary team work with Victor Garvey, Chef Patron of fellow Michelin Starred Sola Restaurant.

“Preparations and discussions are well underway for tonight’s prestigious event,” Under Grain said.

The Four Hands event’s exclusive guest list is made up of just 30 people, including Michelin influencers and Malta Tourism Authority (MTA) representatives. The chefs will curate a tasting menu made up of six courses, with both chefs preparing three each.

The menu will have Maltese influence and will be paired with local wine that was flown from the island specifically for the event.

Mr Borg has been at the helm of the Maltese restaurant's culinary vision for the past three years, steering it to Michelin Star success just five months after its opening in 2020. That same year, the acclaimed Michelin guide launched in Malta, awarding Under Grain the coveted Michelin Star.

Mr Borg said in July that it is a “privilege” to be chosen for the prestigious event, as it “has been a childhood dream of mine to produce my own work internationally while also shining a light on Maltese gastronomy”.

Built on the idea of reinventing classic dishes into “contemporary works of art,” Valletta restaurant Under Grain seeks to combine new ingredients with farm-to-table meats and poultry, including fresh fish brought in daily from Marsaxlokk.
