ION Harbour by Simon Rogan, Malta’s only two Michelin star restaurant, has launched a ION at Sea – luxury private floating chef’s table experience.
Hosted aboard a Riva 44 yacht, prices start at €1,995 for two people, offering an intimate sunset dinner at the Grand Harbour with panoramic views of the Three Cities.
For €3,495 for two, guests can spend an afternoon at sea and choose where to drop anchor for dinner.
The floating chef’s table launches tonight (Friday 19th June) and will run until Sunday 4th October 2026, sailing every Tuesday, Wednesday, Friday, Saturday and Sunday.
Each sailing is reserved for a single party of two to four guests, with only one booking per evening.
ION at Sea is led by Chef Charlie Wilson and Restaurant Manager Arsen Brahaj, a culinary team from Simon Rogan’s Michelin-starred Aulis Phuket.
Working alongside Simon Rogan and ION Harbour Executive Chef Oli Marlow, they have created a seasonal tasting menu rooted in the Maltese Islands.
“We aren’t just offering dinner on a boat; we are breaking the boundaries of traditional fine dining by translating a two-Michelin-starred kitchen environment directly onto a beautiful yacht,” Mr Rogan said.
“It has been an incredible technical and creative challenge to pioneer an interactive chef’s table on a moving boat, and to create an experience that reimagines how guests connect with Malta’s stunning landscapes.”
