Renowned UK food writer and television cook Nigella Lawson has delighted her global audience by featuring a quintessential Maltese recipe, Imqarrun il-Forn (baked macaroni) on her website and social media channels.
The recipe comes from Maltese-Australian chef Simon Bajada, who highlights the dish in his cookbook, Malta: Mediterranean Recipes from the Islands.
Ms Lawson introduced the recipe with her characteristic enthusiasm, sharing on Instagram, “This week’s Guest Recipe from the #CookbookCorner archive is the wonderful Baked Macaroni (Imqarrun il-Forn)."
Mr Bajada, in his book, recalls how Imqarrun il-Forn evokes cherished memories of his childhood: “Lunch at my grandmother’s often meant this dish. If it wasn’t on the table, it was in the fridge. My cousins and I would fight over the irresistible crusty edges.”
A staple of Maltese cuisine, Imqarrun il-Forn is a simpler cousin to the more elaborate Timpana, omitting the pastry layer but delivering the same comforting satisfaction.
It’s widely available across Malta and Gozo, from cafes to humble bakeries, often served in convenient aluminium trays. While Mr Bajada’s recipe provides a streamlined version, he notes that ingredients such as chicken livers, boiled eggs, and peas can be added for a more robust flavour profile. And though it may not reheat perfectly, he swears by its appeal when eaten cold on a hot summer’s day.
