Michelin Guide-listed restaurant Marea has named seasoned culinary professional Gabriel Caruana as Head Chef, it announced on Thursday.
“Gabriel brings forth a wealth of experience both internationally at Michelin Starred restaurants and locally too; more recently forming part of a successful team as an Executive Sous Chef that amassed a Michelin star award for three years running,” the restaurant said.
Through these experiences, Mr Caruana has gained a “wealth of knowledge that is encompassed in his creations”.
Inspired by the art of simplicity, he is driven by making use of local and Mediterranean ingredients from small producers to “curate dishes that respect the ingredient”.
Mr Caruana describes himself as "spontaneously planned" in the kitchen, and he hopes to transmit that spontaneity onto his dishes at Marea.
Additionally, the restaurant officially launched its new summer menu, which was served on Mr Caruana’s first service on Thursday. It includes a variety of Mediterranean classics like open flame-cooked meagre and burratina from Puglia, as well as Asian delicacies such as soft-shell crab futomaki sushi.
Situated in the picturesque Kalkara Waterfront, Marea is a mediterrasian restaurant and lounge bar that specialises in a range of Japanese-inspired sushi, sashimi, pasta, seafood, fish, as well as meat. The restaurant was listed in the acclaimed Michelin Guide for 2022 earlier this year.
