No two days have been the same since Edmond Bonett joined Corinthia Caterers a little over three years ago. “My role brings with it a healthy mix of duties and responsibilities but also great satisfaction and a sense of achievement at the end of each day”, Mr Bonett says. 

Initially filling the role of Chief Operations Officer at a business focused on airline and event catering, Mr Bonett was appointed as General Manager in January 2024 and, additionally, became the General Manager for Costa Coffee Malta following an internal amalgamation of the businesses in August 2024.

Since the beginning, his focus has been on strengthening Corinthia Caterers’ core business of event and airline catering services whilst also looking at other areas of the food industry to widen the company’s portfolio.

“We’ve expanded significantly in the past three years following a management restructuring exercise in 2023”, he says. “While we remain true to our roots and leverage what we do well, we also wanted to expand our expertise in other sectors of the hospitality industry.”

Today, Corinthia Caterers manages contract catering and food & beverage operations. The company also delivers film catering services and operates several canteens, cafeterias and restaurants.

Perhaps the most visible recent addition to the company’s portfolio, cafeteria Tat-Te welcomes travellers at in the arrivals area of Malta International Airport, offering tasty Maltese snacks, coffee and sweets 24 hours a day. “We’re currently considering plans to expand the concept further outside of the airport”, Mr Bonett says.

Il-Kcina Restaurant at Limestone Heritage is another recent addition to the Corinthia Caterers portfolio, as is the food & beverage operation at Vivaldi Hotel in St. Julian’s. Here, the Corinthia team is the driver behind the main restaurant and banqueting operations but also delivers room service and the hotel’s rooftop hospitality during the warm summer months.

“Expanding our portfolio has given us the opportunity to make better use of the company’s existing infrastructure which gave us a wealth of transferable expertise. At the same time, we diversified revenue streams and positioned our business for growth.”

Edmond Bonett emphasises that the team played on existing strengths to grow the business and explore other parts of the food industry in Malta. As part of consolidating the company’s operations, management of the Costa Coffee Malta franchise was also brought under the Corinthia Caterers umbrella, having been managed separately before.

For the remainder of 2026, Mr Bonett is focused on continued consolidation without losing sight of new opportunities: “We’re always evaluating opportunities that present themselves and align with our core principles of providing our customers with an experience – an offering that is built on quality and excellence, whatever its shape or form.”

None of this would be possible without a dedicated team serving guests whether they’re seeking a quick coffee after a long flight or are sitting down for a wedding meal.

“I believe that labour shortages are the most critical challenge for the catering and hospitality sector in Malta”, Mr Bonett says. “Our industry has grown rapidly, but workforce supply hasn’t always kept up. Many local workers have left hospitality to pursue other opportunities in industries like iGaming and technology, leaving businesses dependent on foreign workers.

“At the same time, we’re dealing with a highly competitive landscape and a very dense market with many brands offering similar products that are not always easy to differentiate.”

Operating within such a competitive environment has its challenges, but it also opens up new opportunities. “Catering has been and will always be a core pillar of our economy and the tourism sector”, Edmond Bonett explains. “Right now, the market may be oversaturated with generic offerings, but by focusing on product differentiation and delivering an experience-driven, consistent, premium offering, we can continue to grow.”

Flexibility is another key to continued success: “We need to keep a close eye on market shifts, trends and changing demands. This will allow us to take a proactive approach that is fresh, timely and innovative.”

Edmond Bonett believes that smart operations are one of the foundations of this type of ongoing success. Two other pillars of the company’s strategy include a commitment to environmental, social and governance (ESG) principles.

“Sustainability is deeply embedded across the entire Corinthia Group. We’ve introduced multiple initiatives to reflect this commitment, including waste separation and reduction, sustainable sourcing and other related practices.”

Corporate social responsibility is another area close to Mr Bonett’s heart: “True success extends beyond business performance, and we take great pride in actively contributing to the communities we serve.”
